"YOU DON'T SAY" jokes have a mean that other people's situation should'not to be question because you now the answer, and if you ask about it they will answer randomly or even unreality answer
for the example read this dialogue :

mama arrived in home
mama : "derp!?!"
derp : "yes mama?"
mama : "are you home?"
derp : "no iam in sky!"

nah i think you understand, when mama called derp, its proof that derp was in home, there's unimportant to ask about derp "are you home", so derp will answer it randomly "no iam in sky", "no iam in mars" or "no iam in school" and something can make situation more fun
